National Lemon Meringue Pie Day

Enjoyed a nice quiet Anniversary weekend with DH. The only complaint was that it went by way too fast.

This week has been full and downright crazy. We grabbed the last 4 items off of our daughters school supply list, so she is officially set for High School! I can't believe how many items she needed and I am glad we got an early start. Pheeew finally done :)

Was craving lemon meringue pie, little did I know August 15th was National Lemon Meringue Pie Day and took my first crack at making one from scratch. It was perfect! (Photo posted below)

Garden is looking phenomenal! Broccoli is loving this weather and we should have 9 full sized heads next week, I personally picked a few handful of roma tomatoes this morning and everything else is doing well. We are all pleasantly surprised with how well our garden has done this year. Its been one of the best years so far, especially with the brand new roto tiller.

Today we helped a man who fell at the local Library. I felt so bad for him and he refused an ambulance..I just hope he is ok!

Our youngest daughter won a prize for the Summer Reading Program! She is so thrilled with her gift certificate :)

Oh Happy Day! :D

I was stoked when I went out to check my garden and found broccoli heads! Its been difficult trying to control the beetles and such organically but its definitely been worth the time. All 15 plants survived and even though we planted late, they are thriving beautifully! We picked a few more tomatoes today as well and many are orange and will be ready by Monday or Tuesday :) I chose beefy Roma tomatoes this year and I am sooooooo glad we did! The plants are loaded.

This will be my last post til Monday since we are off to enjoy our 15th Anniversary this weekend. We are so incredibly blessed and have come a long way :)

You make me smile, laugh and you make me happy. I am so glad to have you, not just as my husband but also as my best friend. I couldn't and wouldn't want to imagine my life without you <3 Thanks for always being here for the girls and I, through it all, we have made an incredible life together! I love you and always will! <3

Gearing up

For our Anniversary this weekend!

I am spending this week solely on deep cleaning each room and cleaning the carpets downstairs, cleaning the refrigerator and cupboards in the kitchen while trying to make room for my home made refrigerator pickles. I want to do at least 75 quarts. They don't last long around here.

Baking, baking and more baking seems to be on the agenda as well. DH asked for my zucchini cake which is actually a family recipe passed on from many generations..I did add a wonderful lemon icing and its amazing.

On more than one occasion, I have been criticized (in the past) and called a horrible mother because my husband and I have and ENJOY overnight dates. Why is it that so many people feel guilty or would rather not spend time with their spouse? After 15 years, I can tell you that every once in a while you need those kid free weekend's to just enjoy each other. Just remember that one day your kids will leave and start their own families and what's left is your marriage. If you haven't invested time and effort into your marriage then you will have nothing! Difficult decisions have been made over the last few years as to eliminate the hurt and pain to my children. And it has truly been a blessing in disguise. I am not perfect by any means but my DH and I have raised 2 daughters in a loving and stable environment and I know they both appreciate that they have us both around and we clearly have done better than most people in general.<3

I am trying a new recipe for dinner tonight (Wednesday) if it turns out as well as I think it will, I promise to post it later on.

3 of us joined the Summer reading program at our local library this year. We had so much fun choosing books we probably wouldn't have chosen otherwise. It's true, you can't judge a book by its cover! It was so much fun and we all had a blast, with the end on Friday. My husband and I have finished 35 books between the 2 of us and my youngest daughter will come in at over 2800 minutes of reading. We look forward to next Summer indeed :)

Holy busy week!

My daughter and I did a ton of weeding around the yard yesterday. The ivy is really overtaking everything and its nice to be getting rid of that as well. We filled the wheelbarrow 3 times!

Today I am working on freezing my organic herbs (photos posted below) since I prefer preserved herbs over dried ones which really lose their potency over time. And making blueberry breads and coffee cake along with blueberry pancakes for the freezer.

I can't believe its Saturday! We had such a busy week from picking blueberries to cleaning to baking to weeding to overtime. All four of us will be taking a day to rest tomorrow and we all deserve it. I pulled a recipe which a dear friend shared with me last year for bang n blueberry coffee cake and it was a winner. Thanks all for sharing your family recipes with our family. After we get back into our school routine, I will be adding a Recipe of the Day to my blog.
